The olives are processed within 12 hours after they have been collected. During the transportation to the mill and during the loading and unloading phases cassettes and ventilated chests are used in order to avoid olives to crush and the damage of the structure of the oil droplets within the cell of the drupes: in this way we prevent any phenomena leading to the decline in the quality of the oil produced.
